Japanese cooking knives.
The Seki Magoroku Shoso knives, with their elegant stainless steel look, are true jewels in the kitchen. These knives, forged from stainless steel, are sharpened and honed using a sophisticated technique. The result is blades with an excellent cutting edge, high strength and good cutting performance, which are perfectly suited for daily use in the kitchen.
In order to reduce the cutting resistance, the knife blades are sharpened at a slow speed and manufactured using a new process. As a result, each Shoso has a specific cutting edge and the friction between the product to be cut and the blade is reduced. The ergonomic stainless steel handle with diamond pattern forms an invisible transition to the aesthetically shaped satin-finished stainless steel blade. The knives are made entirely of stainless steel, which makes them pleasantly light and safe to handle and ensures optimum hygiene.
The knives of the Shoso range have an integral structure, i.e. there are no welds between the blade and the handle. Kai's exclusive sharpening technique consists of three steps (including the one that gives the edge the optimal cutting angle) which allows for better cutting of food. The 1K6 steel used for the Shoso range has a carbon content of 0.8% and a Rockwell hardness of 58 +/-1. The cutting edge is convex and the finish is satin.
